- 1 bunch of arugula
- 1/4 cup of pecorino or parmesan
- 2 cloves of garlic
- Juice of half of one lime
- 1/2 cup pumpkin seeds
- 1/4 cup macadamia nuts
- 1/2 - 3/4 cup of organic extra virgin olive oil
- pinch of salt
Combine all ingredients in food process except for olive oil and blend. Blend in olive oil.
This recipe uses more nuts and olive oil and less garlic and cheese than traditional pestos to balance out the spiciness of the arugula. Try it — its delicious 🙂
In the picture with this recipe I used the arugula pesto in a black bean burrito with veggies. Super delicious.
